BITE started with one question: what does a chimi sandwich taste like when it's made right? The answer starts with the pan de agua. A traditional Dominican water bread with a crispy crust and a soft, fluffy interior. There's no dining room by design. The counter is where the conversation happens.
The chimi is a Dominican street sandwich. Most people outside the DR have never heard of it. Ask about it at the counter and you'll get the whole story while your order is being made. That's the point.
